Hotel Sambhar

Thanks to all of you for your entries and support for AFAM.As i had requested, only few of you had suggested for next month's fruit.So if you can please suggest next month's fruit with this post so that i can make an unanimous decision.Now back to recipe...

Hotel sambhar, as the name suggests it tastes just like that.It goes well with dosa and idlies.


Ingredients

Toor dal - 3/4 cup
Tamarind paste - 1tsp
Surakkai / Bottle gourd - 1/2 (medimu sized)
Vendakkai/Okra - 8
Onion - 2 (sliced)
Tomatoes - 1
Carrot - 1
Oil - 2tsp
Mustard seeds - 1tsp
Urad dal - 1/2 tsp
Green chillies - 2 (slit)
Coconut- 1tbsp(optional)
Sambhar powder - 1/2tsp(optional)

For Grinding
Ginger - 1 inch piece
Garlic - 2pods
Corainder seeds - 1tsp (dry fry)
Jeera - 1/2tsp>

Method

Boil toor dhal with little turmeric and set aside.In a pressure cooker, boil all the vegetable sincluding onion and tomatoes with little turmeric and salt.(You can add brijal,drumsticks,pumpkin etc).Boil it for 1 whistle.Once the pressure wears off, open the cooker and add tamarind paste, grinded paste and water.Let it boil for few min.s till the raw smell goes.Now add cooked dal and add more salt if neccessary.At this point, i add 1/2tsp of sambhar powder for some color and falvour.Let this boil for another 5 min.s and switch off the heat.In another pan, heat oil and fry mustard seeds, urad dal, curry leaves, hing, and red chillies and pour this tadka into the sambhar.Serve hot with Dosa/idli.

Asha's Butter chicken

Another hit recipe,Butter chicken from Asha of Foodie's hope that i tried during last week.Everyone fell head over heels for it.Excellent recipe.I made a few changes with her recipe.I used 1tsp of poppy seeds instead of almonds/cashews.And instead of boiling chicken, i shallow fried the chicken pieces in a 1tbsp of butter on high heat making them golden brown on the outside.

Wow!lot of delicious dishes in your post today...i loved butter chicken's colour,appearance of set dosa with chutney..everything...

I had a long desire to try hostel sambar..let me try your version.I never added thelist with you mentioned in grinding list.i use to add garlic along with dhal...when compared with my ususal method..i found little variations here...let me sure try this...

You know, when we were growing up, we were told that even vegetarian hotels used to add some powdered prawns to the sambar for that special taste!

This recipe is so different from the usual recipes of sambhar :)I will try this , this one looks easy. I have always tried to bring that 'hotel ' touch to my sambhar but never succeeded :) Thanx a lot for sharing this rccipe :)

Hi Mahesh, I made your hotel sambhar yesterday and it was just amazing. My husband even asked me if I had bought the sambhar from the indian restaurant:) Thanks for the recipe. It is going to be a regular at my place from now on.
